Passionate about cheese, the Head Ram Tony, attended a cheese making course at Charles Sturt University in 2005. Since then, Tony has been making a variety of cheeses in his ‘spare time’.
Each Vintage, Tony squeezes in a cheese making session so that the cheese can be matured in the grape marc (fermenting skins) of the must to give it a rich purple colour and gorgeous taste!
This cheese is available to taste on the Queens Birthday Weekend each year – no need to book [except groups 6+]. Unfortunately Tony’s cheese is not available for sale… maybe one day!
